Close to the border between Tolima and Caldas lies the community of Montebonito around which lie around 760,000 coffee trees belonging to the small farms that supply this coffee. The majority of the cherries grown here are Colombia, the Caturra x Timor hybrid cross developed with Cenicafe and prevalent across the country. Their red, sprouting leaves during growth differentiate them from the green, corrugated leaves of Caturra, also grown and picked for this coffee.
The cherries are picked at full ripeness and taken for immediate depulping without water, before being added to the water in fermentation tanks where they will sit for the next 19-22 hours. Once washed, this is then mechanically dried to maintain an even speed of drying and consistent moisture content in the green bean. Final humidity in the bean should be around 10.5%.
